PRE-FERMENTING LINE​

Biga is a pre-dough obtained with indirect method, made by a mix of flour, water and brewer's yeast; it's basically a dry preparation that gives some peculiarity to the final product. SITEP's pre-fermenting line allows to independently manage the maturation process, by shifting it at the better moment.​
