In the heart of Arzignano (Vicenza – Italy), Olivieri 1882 is a reference point for those seeking artisanal excellence in bakery, pastry, and coffee. Today, the company is run by Oliviero Olivieri and his son, representing the fifth generation, who has transformed the historic family business into an internationally recognized brand—with panettone sold in 76 countries worldwide.

Specializing in large leavened products, Olivieri is a careful, curious craftsman, and very demanding when it comes to processes and results. Before meeting Sitep, he had already experimented with two different competing technologies for retarder proofing, but without finding complete satisfaction.

The real turning point was Sigep, where Oliviero discovered Sitep and decided to test our technology. The result? A positive surprise right from the first use, with a more controlled, stable, and reliable fermentation. Our system won over Olivieri 1882 with its technical quality, ease of use, and the final result on leavened products.

Since then, the collaboration has grown: three more have been added to the first Sitep cell, confirming the mutual trust and the concrete effectiveness of our approach.
